The ingredients of Hawaiʻi inspire our cooking. Our fixed chef’s menu is prepared in an open kitchen for 14 guests, drawing on Japanese techniques alongside the many culinary traditions that call Hawaiʻi home.
The Experience
Dinner begins promptly at 6:00 PM.
Courses are prepared during service and served simultaneously to all guests.
Cocktails are available from 5:30–6:00 PM.
Optional sake pairings and additional beverages are available.
Reservations are required and may be booked up to 30 days in advance.
Reservations are prepaid. No refunds, changes, or cancellations regardless of reason.
We are unable to accommodate allergies, dietary restrictions, gluten-free requests, substitutions, or modifications.
Current Chef’s Menu
Our connection to the land begins at Ai Farm, our farm in Kapahi, where we grow many of the herbs used in our kitchen, including shiso, mitsuba, garlic chives, lemongrass, pandan, yuzu, and makrut lime. Beyond our own farm, we work with farmers, ranchers, and fishermen throughout Hawaiʻi to source the ingredients we cook.
