Life Threatening Allergies

We operate a small kitchen and source ingredients from a variety of suppliers. For this reason, we cannot guarantee no cross contamination with a specific allergen. Therefore, we cannot accept any allergies or dietary restrictions associated with conditions that would cause death, hospitalization, injury, or harm if the guest were to come in contact with or consume an item that contains or came into contact with a specific allergen or ingredient. Life threatening allergies cannot be accommodated.

Pescatarian

We offer an extensive array of menu choices based on fish and vegetables and can easily accommodate a “pescatarian” dietary restriction.

No Beef

We offer an extensive array of menu choices based on fish, chicken, and vegetables and can easily accommodate a “no beef” dietary restriction.

No Pork

We offer an extensive array of menu choices based on fish, chicken, beef and vegetables and can easily accommodate a “no pork” dietary restriction.

No Shrimp

As of this writing, we do not cook with or offer shrimp, however, we have in the past cooked with shrimp and we cannot guarantee that none of our Japanese ingredients do not contain or have not been in contact with shrimp. In the future, we may once again offer locally sourced shrimp. We can generally accommodate a “no shrimp” restriction however we cannot accommodate life threatening shrimp allergies due to the risk of cross contamination.

No Shellfish

As of this writing, we do not cook with or offer shellfish, however, we have in the past cooked with shrimp and abalone and we cannot guarantee that none of our Japanese ingredients do not contain or have not been in contact with shellfish products. In the future, we may once again offer locally sourced shrimp, abalone, or other shellfish. We can generally accommodate a “no shellfish” restriction however we cannot accommodate life threatening shellfish allergies due to the risk of cross contamination.

No Nuts

As of this writing, we use macadamia nuts and macadamia nut milk but do not use any other nuts.

We make use of ingredients that are processed in facilities that process nuts and cannot guarantee no cross contamination occurred within the facilities that produce those products.

We can generally accommodate a “no nuts” restriction however we cannot accommodate life threatening nut allergies due to the risk of cross contamination.

No Sesame

Sesame seeds and oils are used broadly in our cooking and preparation . We therefore cannot accommodate the “no sesame” restriction.

Vegan and/or Vegetarian

With at least 24 hours advance notice, we can provide robata options that do not include beef, pork, or fish. We have additional menu options that do not include beef, pork, or fish.

Eggs are used in tempura, katsu, tamago, cake, and ice cream.

Dashi is a core ingredient in many of our sauces and preparations, and katsuobushi (shaved bonito) is used to make the dashi.

We are unable to offer a dining experience that excludes the use of dashi, which is made with katsuobushi.

Gluten Free and/or Celiac Disease

Due to the prevalence of soy sauce in Japanese cooking, we cannot offer a gluten free experience. We make extensive use of soy sauce and other sauces that contain gluten. Our tempura batter and katsu breading also contain gluten. For guests who wish to order items other than tempura or katsu and can accept the gluten found in soy sauce and other ingredients used to create our sauces, there are numerous options based on fish, meat, and vegetables. We cannot accommodate life threatening gluten allergies due to the risk of cross contamination.

No Milk

With the possible exception of cake, ice cream, or other dessert items, milk is not used in our cooking. We can easily accommodate a “no milk” restriction for lunch or dinner, however we cannot provide alternatives to specific dessert items on our menu that may use milk. We are unable to produce alternate ice cream options that do not include milk. Ice cream containing milk and cream is used in our Kakigori Supreme dessert. If ice cream is accepted even though it contains milk, please specify “no milk ice cream ok” as the restriction. As of this writing, we do not use milk from animals other than cows. We are not able to offer milk from animals other than cows as an alternative to milk from cows.

No Cream

With the possible exception of cake, ice cream, or other dessert items, cream is not used in our cooking. We can easily accommodate a “no cream” restriction for lunch or dinner, however we cannot provide alternatives to specific dessert items on our menu that may use cream. We are unable to produce alternate ice cream options that do not include cream. Ice cream containing milk and cream is used in our Kakigori Supreme dessert. If ice cream is accepted even though it contains cream, please specify “no cream ice cream ok” as the restriction. As of this writing, we do not use cream from animals other than cows. We are not able to offer cream from animals other than cows as an alternative to cream from cows.

No Cheese

With the possible exception of cake or other similar dessert items, cheese is not used in our cooking. We can easily accommodate a “no cheese” restriction for lunch or dinner, however we cannot provide alternatives to specific dessert items on our menu that may use cheese. When cheesecake items are on the menu, we cannot produce cheesecake alternatives that do not include cheese. We are not able to accept restrictions dictating the animal source of any cheese that may be used. Guests requiring that cheese be produced from specific animals are encouraged to use the “no cheese” restriction and to refrain from ordering cheesecake.

No Butter

With the possible exception of cake or other dessert items, butter is not used in our cooking. We can easily accommodate a “no butter” restriction for lunch or dinner, however we cannot provide alternatives to specific dessert items on our menu that may use butter. As of this writing, we do not use butter from animals other than cows. We are not able to offer butter from animals other than cows as an alternative to butter from cows.

No Dairy

Due to ambiguities in the definition of “dairy” we cannot accept the “no dairy” restriction. Guests with dairy restrictions are requested to use the “no milk” and/or “no cream” and/or “no butter” and/or “no cheese” restrictions so that the kitchen is clear on which forms of dairy are restricted.

No Soy Products

Due to the prevalence of products derived from soy beans in Japanese cooking, we cannot offer an experience that uses no products that contain soy beans or are derived from soy beans including but not limited to soy sauce and miso.

No Seaweed

Due to the prevalence of seaweed in Japanese cooking, we cannot offer an experience that uses no seaweed. Kombu is the basis of dashi, and dashi is the basis of many of our sauces.

No Raw Food

The majority of our menu options are cooked, however some sauces, condiments, garnishes, pickles, and other ingredients may be raw.

Guests requiring only cooked foods may order cooked foods from the menu and specify “no raw food” as a restriction, however, we are unable to offer alternatives to the sauces, condiments, garnishes, pickles, and other raw ingredients used in the preparation and plating of our dishes.

Although we can endeavor to comply with the “no raw food” restriction by providing foods that have been “cooked” it should be noted that each food item is cooked at different temperatures and we cannot guarantee that all “cooked” foods will exceed a pre-set temperature threshold. The temperature used to cook each food item is based on relevant food safety regulations and taste/texture considerations, and will vary item by item.

There will be no discounts, refunds, or other compensation provided for dishes that exclude components with raw ingredients at the request of the guest.

No Eggs

With the exception of tempura, katsu, tamago, cake, and ice cream, we offer a range of menu options that do not contain eggs. We are not able to provide tempura, katsu, tamago, cake, or ice cream made without eggs.

No Vegetables

As most expressions of Japanese cuisine make extensive use of vegetables, the majority of our dishes contain vegetables or vegetable products. While it would be possible to order several protein-only items from the Robata, this would not provide a complete meal and is not an experience we can recommend. Our menu makes extensive use of vegetables and products that are derived from vegetables.

No Fish

We offer a range of menu options based on chicken, beef or vegetables, and from time to time, we may offer some pork options.

Dashi is a core ingredient in many of our sauces and preparations, and katsuobushi (shaved bonito) is used to make the dashi.

We are unable to offer a dining experience that excludes the use of dashi, which is made with katsuobushi.

No Raw Fish

We offer a range of menu options that do not include raw fish.

Fruit Restrictions

We make extensive use of locally grown fruits in our cooking. Typically, the fruits used in our cooking include without limitation: banana, pineapple, mango, coconut, guava, surinam cherry, citrus, soursop, watermelon, papaya, and lilikoi.

For guests with a specific fruit restriction from this list, we may be able to suggest menu items that don’t include the restricted fruit, however, in cases where we do use a restricted fruit, we are unable to develop alternative dishes or sauces that exclude the fruit.

For guests purchasing a pre-paid meal or a bento, we can make our best effort to exclude items that contain a restricted fruit, however, we cannot offer alternatives or refunds, discounts, or other forms of compensation where ingredients were excluded to comply with the fruit restriction.

We don’t typically use strawberries.

We use umeboshi plum as a condiment and within some sauces. We do not use peaches, apricots, or nectarines.

We sometimes offer locally grown watermelon. We do not use cantelope or honeydew. We sometimes cook with winter melon. Although this item is referred to as a “melon” it is also typically classified as a squash and considered to be a vegetable.

When specifying a fruit restriction, please indicate the specific fruits included in the restriction. We are unable to comply with the “no stone fruit” restriction due to the potential for confusion in determining which fruits may or may not meet the definition of stone fruit. We are unable to comply with the “no melon” restriction due to the potential for confusion in determining which fruits may or may not meet the definition of melon.

Mercury Restrictions

We do not have the capacity to measure the mercury content of the fish that we offer and therefore are unable to comply with restrictions related to mercury content of fish.

We offer fish caught in Hawaiian waters, including ahi, kanpachi, ono, opah, mahi mahi, and swordfish. The fish available on a specific day is determined by market availability and we therefore cannot guarantee the availability of a specific species on a specific day.

We offer a range of menu options based on chicken, beef or vegetables, and from time to time, we may offer some pork options. Guests who require fish choices other than those we are able to offer on a specific day may choose non-fish options from the menu.

Pregnancy Diet

It has been our experience that each guest requesting a “pregnancy diet” has distinct requirements. Therefore, due to the lack of consistency and clarity around the definition of “pregnancy diet” and the risk of confusion or misunderstandings arising from this lack of definition, we are unable to comply with the “pregnancy diet” restriction.

We welcome pregnant guests and ask that pregnant guests consult with their doctors to determine the specific dietary restrictions appropriate to their situation then order items from the menu that align with the guidance of their doctors.

No Alcohol

We make extensive use of mirin and sake in cooking, both of which contain alcohol. We cannot accept the “no alcohol” restriction.

No Sugar

Sugar or products containing sugar are used many of our recipes. We cannot accept the “no sugar” restriction.

No Cooked Food

The majority of our menu items are cooked. We cannot accept the “no cooked food” restriction.

Keto Diet and/or No Carbs

Our menu includes extensive protein and vegetable options, but we are unable to modify our menu and operations to comply with the “keto diet” restriction or to provide modifications that include no carbohydrates.
